My Story
I’ll admit, this isn’t what I thought I’d be doing.
I got a call from my doctor confirming a diagnosis that made my stomach drop. My life as I knew it was over.
My name is Ashley Nolan, and I was diagnosed with Celiac Disease only a few days after graduating from college. No more authentic Italian food, fudgy brownies, or deliciously soft cakes.
Life became A LOT more difficult (as if it wasn’t already difficult enough).
I had a hard time dealing with things like:
Curling up with anxiety at the thought of eating anything
Having to check the labels on everything I bought, and the menus of every restaurant I went to
Watching my friends and family adjust their lives because of ME
Crying every time I craved something I used to eat all the time
Feeling depressed, embarrassed, and scared every time I went out
Thankfully, I had a friend who had already experienced this journey. She became the light that guided me out of those dark woods.
Things got easier once I learned how to cook gluten-free. I even found alternatives I love!
After a while, my confidence grew, and being Celiac wasn’t as difficult. But I realized something…
There are SO MANY people dealing with the same challenges. Feeling trapped with a disease that changes their lives in so many ways.
I wanted to be the light in their journeys, just like my friend was for me.
