Out of the Woods was an idea that sprang from loving and learning to bake gluten-free. After being diagnosed in 2021, I (Ashley) had to make an entire lifestyle change, which I noticed impacted me more and more with each passing day. From grocery shopping to eating out at restaurants, the realization hit me that my life has officially changed, I lost my freedom to enjoy some of life’s simplest pleasures. I began to adjust how I cook and bake. Especially baking, because who doesn’t always love a sweet treat or a delicious fluffy bread? I surely do! I realized it is hard to come by a variety of decent and flavorful gluten-free baked goods.
That’s why I decided to open a gluten-free bakery! After realizing I could enjoy delicious baked goods again, I thought “Why not provide these baked goods to people just like me?”

Hi! My name is Ashley Nolan and I’m the Owner of Out of the Woods Gluten-Free Bakery.
I graduated from Kennesaw State University with a degree in Mechanical Engineer. I know, a big change of careers, but I have always loved to cook and bake growing up. Having this lifestyle change enhanced my passion for baking.
Along with baking, I enjoy reading, spending time with my boyfriend and family, playing with our cat, watching sports (especially baseball), listening to my favorite artists, and binge-watching movies and shows.
